All the dishes we prepare are eaten for lunch or eaten/sampled across the day.
The course usually ends around 4:45.
All the recipes come in a lovely presentation folder for you to take home.

Fish & Seafood cookery course
Background
With resurgence in fish counters at the supermarkets it is now easier than ever to buy fresh fish and many of us would like to include more of it in our diets for the obvious health benefits and as an alternative to meat. But we're often anxious about how to prepare different fishes and which type of cooking method to use to best effect.
This course helps you to overcome many of those anxieties that you may have, by teaching you how to prepare fish and seafood. We cover the basics of preparation, skinning, as well as filleting, before cooking a range of lovely dishes using different cooking methods.
During the course you'll also prepare several different types of seafood and again create some beautiful dishes.
The Fish & Seafood cookery course
The day begins at 10am with refreshments and a chance to meet with the others on the course. We begin with a description of the day and the dishes and techniques that we'll be covering.
Since numbers on each course are small there's plenty of opportunity to ask questions across the day but this is an ideal time to cover any specific questions you might have.
We have a short talk on health and safety and an orientation of the kitchen and facilities, before donning a lovely crisp apron and starting the cookery day.

- Filleting sea bass and serving grilled with fennel and tomato sauce

- Omelette ‘Arnold Bennett’, a wonderful dish of smoked haddock, eggs and cheese that will change your view of smoked fish forever!
