A taste of Italy - our popular Italian cookery course
Background
Italy has a wide and varied cuisine, which ranges from the rich dairy of the North, down to the rugged and traditionally Mediterranean feel of the South. Indeed Italy as a specific entity did not exist before 1871 when its many states became unified under a single flag. This history and diversity plays itself out continually in its culture and therefore its food. This is what makes Italian cooking so attractive and exciting. Simple, fresh, beautiful ingredients can be transformed into mouth-watering dishes all with their regional variations.
The Taste of Italy cookery course attempts to capture the essence of those dishes we so associate with Italy and yet aims to give you the confidence to prepare and cook them at home.
The Taste of Italy course
The day begins at 10am with refreshments and a chance to meet with the others on the course. We begin with a description of the day and the dishes that we'll cover, including importantly when we're likely to eat!
Since numbers are small on each course there's plenty of opportunity to ask questions across the day but this is an ideal time to cover any specific questions you might have.
We have a short talk on health and safety and an orientation of the kitchen and facilities, before donning a lovely crisp apron and starting the cookery day.
Example dishes
Some of the Dishes we cover include:
- A beautiful yet simple tomato sauce, fantastic for topping pizzas, with pasta, or with the ‘melanzane parmigiana’ that converts many a non aubergine fan on the day!
- Making the creamiest Risotto and variations, plus short cut tips for home cooking
- Rich and dreamy Tiramisu - truly ‘a pick me up’
- Slow cooked Ragu
- Fresh Pasta making
- Olive Focaccia and pizza
All the dishes we prepare are eaten for lunch or eaten/sampled across the day. The course usually ends around 5pm.
All the recipes come in a lovely presentation folder for you to take home.
